Garlic Toast

3-4 cloves garlic or equivalent of jar garlic, chopped & crushed
2 tablespoons butter
2 tablespoons extra-virgin olive oil
1 loaf crusty bread, split or sliced
Grated cheese, Parmesan or Romano for crisper top, Mozzarella or Provolone
for softer stingier top.
Herbs – try chopped fresh parsley, flaked parsley, dried oregano, basil or
Italian Seasoning
Combine garlic, butter, and oil in a microwave safe dish or in a small saucepan. Heat mixture in microwave for 1 minute or until butter is melted.
Arrange bread on cookie sheet. Brush bread liberally with garlic oil mix, or spoon it on. Sprinkle with desired herbs. Broil 5 minutes or until slightly brown or use toaster oven. Check frequently so it doesn’t burn.
Remove from broiler. If desired, top with cheese and return to broiler 2 to 3 minutes, until cheese is slightly brown and melted. Serve at once.
