Homemade Peppermint Ice Cream Recipe #2

This is another spin-off recipe from the Homemade Peppermint Ice Cream Recipe.
The original Peppermint Ice Cream recipe uses a large candy cane for the flavoring.
This recipe uses Peppermint Extract instead, which is easily obtainable year round.

Homemade Peppermint Ice Cream

14 Marshmallows, the regular size
1 1/2 c. Whole Milk
1/3 c. Powdered Sugar
4 (or 5) Drops of Red Food Coloring
1/4 t. Peppermint Extract

4 oz. (1/2 container) Whipped Topping, like Cool Whip
4 (or more) Mini Candy Canes, crushed; optional

In a saucepan over low/medium heat mix the marshmallows with the milk and powdered sugar. When the marshmallows are mostly melted, add the food coloring and Peppermint Extract and stir well. Continue to heat and stir until the marshmallows are fully melted.

Cool and allow to freeze  (in regular freezer) stirring every half hour or so, to mushy state.
Then fold in the whipped topping and crushed candy canes.
Return to freezer until firm; overnight is best.

Bye for now.

Forgiving the Unforgivable

We have all been hurt by others.
Those memories are permanently etched into our being.

Sometimes the pain is so deep we may feel that forgiveness
is something we can never do.

I try to take the attitude that I don't hate anyone.
But, I can hate their actions
and what they did to me.

Maybe this is why I can give someone I care about
multiple chances and hope that the
same thing won't happen again.

I separate the action from the person.
I can love someone but not like
certain things that they do.

In my direct approach in communicating,
I let the person know where I stand
and when necessary, I will
distant myself from them.

Pumpkin Pie Spice Ice Cream Recipe

This is another spin-off recipe from the Homemade Peppermint Ice Cream Recipe.

Pumpkin Pie Spice Ice Cream Recipe
14 Marshmallows, the regular size
1 1/2 c. Whole Milk
1/3 c. Powdered Sugar
1/2 t. Vanilla Extract
1/4 t. Pumpkin Pie Spice

4 oz. (1/2 container) Whipped Topping, like Cool Whip

In a saucepan over low/medium heat mix the marshmallows with the milk and powdered sugar. When the marshmallows are mostly melted, add the Vanilla Extract and Pumpkin Pie Spice and stir well. Continue to heat and stir until the marshmallows are fully melted.

Cool slightly and allow to freeze  (in regular freezer) stirring every half hour or so, to mushy state. Then fold in the whipped topping. Return to freezer until firm.

Shown above with Ozark Pudding

This mix is a pretty good substitute for the Pumpkin Pie Spice Creamer that is currently only sold around Thanksgiving to Christmas. In comparing the creamer to this it seems the creamer is slightly sweeter (so maybe use 1/2 c. Powdered Sugar) and possibly add a little more of the Pumpkin Pie Spice. You can still keep it frozen and just add a dollop to your coffee. Yum!

Bye for now.

Ozark Pudding Recipe

 Ozark Pudding Recipe

This recipe is one from my childhood, easily over 50 years old.
Laced with apples and nuts and so quick to make up.
It has been a favorite for the cooler seasons of fall and winter here in the Midwest.

Baked in a small casserole dish,
you will notice that it puffs up quite a bit
and creates this delicious crunchy top.

Ozark Pudding Recipe
1 Egg
1/2 C. Sugar *
3 heaping Tablespoons Flour
1 1/4 t. Baking Powder
1/8 t. Salt
1/2 C. Chopped Apples
1/2 C. Chopped Nuts; Pecan or Walnuts
1 t. Vanilla Extract

Whipped Cream or Ice Cream for Topping,
1st picture is shown with Homemade Pumpkin Pie Spice Ice Cream

Preheat oven to 325 degrees. Grease small casserole dish with butter or cooking spray.

In medium bowl with hand mixer, beat egg well; then add sugar, beating until light and creamy. Sift together flour, baking powder, and salt, and add to the egg mixture. Blend well.

Fold in apples and adds. Then add vanilla.

Pour into greased dish. Bake at 325 degrees for 30 minutes. Great served warm with whipped cream or ice cream.

* The original recipe called for 3/4 C. Sugar, but 1/2 C. is plenty sweet!

Bye for now.
