Ozark Pudding Recipe

 Ozark Pudding Recipe


This recipe is one from my childhood, easily over 50 years old.
Laced with apples and nuts and so quick to make up.
It has been a favorite for the cooler seasons of fall and winter here in the Midwest.


Baked in a small casserole dish,
you will notice that it puffs up quite a bit
and creates this delicious crunchy top.

Ozark Pudding Recipe
1 Egg
1/2 C. Sugar *
3 heaping Tablespoons Flour
1 1/4 t. Baking Powder
1/8 t. Salt
1/2 C. Chopped Apples
1/2 C. Chopped Nuts; Pecan or Walnuts
1 t. Vanilla Extract
 
Whipped Cream or Ice Cream for Topping,

Preheat oven to 325 degrees. Grease small casserole dish with butter or cooking spray. 
 
In medium bowl with hand mixer, beat egg well; then add sugar, beating until light and creamy. Sift together flour, baking powder, and salt, and add to the egg mixture. Blend well. 
 
Fold in apples and adds. Then add vanilla. 

Pour into greased dish. Bake at 325 degrees for 30 minutes. Great served warm with whipped cream or ice cream.

* The original recipe called for 3/4 C. Sugar, but 1/2 C. is plenty sweet!
